Bread service: Baguette, 9-grain toast, house-cultured butter

Amuse: Petite Lobster Ravioli ~ sauce americaine, roe

1st Course: Root Vegetable Escabeche ~ chilies, smoked onion caviar, citrus vinegar, watercress, buckwheat crisp

2nd Course: Quail ~ sourdough chestnut and truffle stuffing, ricotta salata, celery salad, brown butter, caper, pomme purée

3rd Course (choice of):
Fish Option: Monkfish ~ parsnip purée, Pernod emulsion, smoked mussels, fennel salad
